Fatty Meat, Cooked to Retain Fat
I recently had some friend's grilled beef burgers. The ground beef was very lean (85/15) to start. And once they had been grilled, they lost even more fat. I ended up getting foot cramps in the middle of the night, which happens to me when I eat too lean!
The same thing actually happened to my ground lamb, when grilled, even though ground lamb is much more fatty than ground beef. But I think the grilling and smoking process causes a lot of fat loss in the meat.
Usually I cook my meats either in the toaster oven, or the slow cooker for larger pieces. These both seem to retain the fats within the meat. In fact, lamb roasts when cooked in the slow cooker sometimes have too much fat for me, and I have to cut some off! And there is always a lot of fat in the juices, which I save and refrigerate so I can prevent putting grease down the drain.
So I think the cooking method is really important in retaining the vital, nutritious fats in good fatty meats. Grilling and smoking really reduces the fat content, and too much for me, leading to muscle cramps. I need that fat! But not too much, either, or I can get diarrhea. It is a delicate balance!
It is interesting, though, how much of a difference it has made to follow the carnivore diet! Having suffered with Crohn's disease my whole life, these last two and a half years with zero carb keto have made a huge positive change! I feel great, my digestion is perfect, all my health parameters are excellent. I am so grateful to find carnivore!
