Keto carnivory: Grassfed ruminants meat and dairy

For the last month or so, I have been eating some 100% grassfed raw dairy. Knock on wood, so far so good! I have been eating raw grassfed Colby and Jack, butter, and colostrum. I have also been eating grassfed, but not raw, sour cream and gjetost. I am trying to increase my vitamin K2 level for strong bones and teeth.

In addition, I am concentrating on the cheapest cuts from my local 100% grassfed beef rancher. Tongue, oxtail, crosscut beef shank, liver, heart, kidney. All at or under US$5 per pound. Really delicious and satisfying!

In other news, I am thinking about purchasing a nice property for off-grid homesteading. I have researched and studied raising geese and sheep. However, I might go with corn, beans, and squash at first. That would be quite a change to my system! I'll decide this week if I will buy it. I was planning on using solar and wind power, but I didn't consider how batteries only last a few years. So I think I would prefer to be non-electric. 

The property has both woods and clearing. The woods could be used for a woodstove which could provide heat, light, and cooking. I originally wanted an incinerating toilet, but that requires electricity or propane. So I might do just an old school outhouse. Get a well drilled for water. Dry the corn, beans, and squash as the Native Americans here did, and keep them in baskets similarly to get through the winter.
