Since I feel so great eating seafood, I have decided to transition to a more fish-based carnivore diet. I am going to plan on my breakfast and dinner being seafood, and just my lunch being lamb. That will make it a little easier to bring my lunch to work too, since lamb is pretty shelf stable.
Then in three months or so, I should have gotten through all of my lamb. I am thinking maybe I can try bringing the dried pollock for lunch that I saw at the Asian grocery store. Maybe next time I go, I will pick up some to make sure I like it! There may be some other dried fish options too:

That way I can still have fish to easily bring with me for lunch on the bus to work, and since I am not cooking it, it won't create "fish smell" in the office!
One problem I see though is that many cuts of fish are lean. So either I make up for that with a fatty fish like sanma or cod liver at dinnertime, or I just don't worry about keeping a high fat intake. Another side issue related to the cuts being lean, is that they have fewer calories. So either I cut back on my calorie intake some more (I already practice 20% calorie restriction from baseline), or I need to make up those calories by eating larger quantities.
We'll see how it goes! For now, it's not really an issue since I am eating nice fatty lamb at lunchtime!
I am really enjoying the variety of all the seafood. I had squid for breakfast, and mackerel for dinner yesterday, and mussels for lunch. Mm mm!!
