Pork and Dairy Update

It's been a week since I've reintroduced pork and dairy and I wanted to share my findings. Pork side/belly seems to be excellent for my blood ketones! So although it makes my omega 6:3 ratio high, as long as I also eat grassfed beef and cream, that will help bring that ratio back down. Pork belly is a great meal which needs no extra fat to produce a good blood glucose/ketone ratio. The ideal blood glucose/ketone ratio is 1:1 in mmol/l when using keto for therapy, according to researcher Dr. Thomas Seyfried.

Dairy at first seemed to cause my blood glucose to rise, my blood ketones to fall, and give me nighttime foot cramps. However, this morning I was pleased to see that my ketones were back up to normal and my glucose back down! So that's great! I did have a lot of clotted cream at dinner. So it just might take more cream than marrow to reach good ketone levels. I had run out of my local farmer's beautiful golden cream, so I had to use Kalona cream, which is mostly grassfed and doesn't have any added gums. It's not as golden as the local 100% grassfed cream, but it is working!

Also, I didn't have a foot cramp last night, which I think was because I made sure to drink quite a bit of water before bed. The cream seems to require me to drink more water, for some reason!

I am a little concerned that the cream may raise my blood pressure. It did earlier this week, and it has in the past when I had cheese regularly. I will try to check it today and report back. Edited to add: I checked my blood pressure again today, and although it is higher than it was pre-cream, it is still within the normal parameters. So all is well!

I will continue with the newly added pork and cream (and also eggs), in addition to the grassfed beef and lamb. I think this will be a good way to maintain zero carb keto, keep costs down, and still eat local foods!
