Keto Carnivory: I Love Offal

I really love offal. I have figured out ways to make sure I keep ketosis even though most offal is too lean. For example, I eat sweetbreads (pancreas and thymus) which are very high fat, along with tendon or kidney, which are mostly protein.

With beef liver, I cook it in and add reserved mutton fat. I will be getting ground heart tomorrow, which I plan on making into paté with reserved mutton fat.

Oxtail is fatty enough to just enjoy on its own. So delicious! Tongue is too.

It is so enjoyable to have variety besides just muscle meat!
