I am curious to find out just how long carbohydrates can affect our system. I haven't ingested any starches for a long time (over a year, I think). I finally broke my zero-carb intake by having a small amount of white rice a few days ago. I was experimenting to see the effect of carbs.
Of course, the next morning, I had been knocked out of ketosis, as expected. However, my fasting glucose is still 20 points higher, even four days later! And my blood ketones are still lower as well. My fasting glucose had been averaging around 69mg/dl and my blood ketones around 3.0 previously. These last few days my glucose has been 89mg/dl, and my blood ketones only 1.0. What a lasting effect a little amount of rice can have!
I will keep tracking for the next few days to see just how long it takes for me to get back to my previous numbers. I am very surprised how long the effects have been. It was only 100g of rice (35g carbs)! If that small an amount has this lasting of an effect, imagine what consistently high carb intake
every day must do to our bodies!
ETA: It has taken a full seven days to get my ketone levels back up and my glucose levels back down to where they were prior to that little bowl of rice. Seven days! I am really surprised. I had no idea that such a small amount of carbs could affect us for so long!
