I want to sing the praises of bone marrow today!
Many people who are doing keto rely on fats such as butter, olive oil, coconut oil, and avocados. However, my gut cannot tolerate these foods. So I researched and tried to find a fat to have on the side of leaner cuts.
In my research, I found the oldest fat source in history, which is bone marrow!
We have found much archaeological evidence of our ancestors splitting bones to get to the marrow. We can imagine it was highly prized, since it is some amount of work to get to it!
Bone marrow is extremely calorie dense, which means just a tiny 15g portion (hardly a bite) packs 121 calories! And not only that, but it is incredibly nutrient dense as well, containing antioxidant vitamins A and E, B vitamins, copper, iron, zinc, and selenium, and when it is 100% grassfed, a great source of omega 3 fatty acids!
Even better, it is delicious and palatable to just eat a spoonful on its own with a little salt on it!
100% grassfed marrow is hard to find and expensive. I priced it out to be 14cents per gram, the most expensive keto food that I have found. However, it is worth it to get it from time to time if you can! I believe there are micronutrients in it that we really need for overall health! Plus, it's so delicious! You can even eat it cold, with a little salt on it. Mmm! Candy for zero carbers!
