Keto Carnivore: From Lamb to Beef

I'm getting down to my last few lamb roasts! Since I haven't had a chance to meet up with my favorite sheep rancher to get more, I have been starting to include more beef. I have a couple favorite cattle ranchers that I meet for 100% grass-finished beef. I've really been enjoying it!

I have picked up a nice assortment of cuts: beef heart for making jerky, a beautiful fatty beef brisket, oxtail, kidney, ground beef, and treated myself to some ribeye steaks.

I am hoping to go back on Saturday and stock up on more beef. I was thinking of getting roasts to make more jerky. I made some of the brisket into jerky and it was great, although actually even a little too fatty in parts, even for me! Which is a nice problem to have!
