Keto Carnivore: Delicious Organ Meats

I am really enjoying the beef organ meats that I picked up at the local grassfed ranch last weekend. I love sweetbreads and tendon, cooked slowly overnight. Mm Mm! And sometimes the cooking water from the tendon gels up to a nice aspic in the fridge, to enjoy later!

I also picked up beef tongue, which is great except for the tip. The tip tends to be tough no matter how long I slow cook it. But the root part is really tender and delicious. I might try cooking the tip in water to see if that helps.

I also enjoy beef kidney and oxtail, cooked in the slow cooker overnight. I have liver from time to time, and heart, too. They are very lean though and can be dry. Ground heart is good. I used to really enjoy making beef heart jerky, but I have no self-control around it!

I also enjoy bull fries, but none of my local ranchers offer them. They are very lean too, so need a fatty side dish like tongue or sweetbreads.

But I really enjoy the different textures and flavors of organ meats. So much more interesting than plain old muscle meat! But it is important to eat a fatty side with the lean organ meats.
