Keto Carnivory: Ukrainian Dairy Dishes

I have been enjoying 100% local grassfed dairy. I have been making ряжанка, fermented baked milk, and eating cheese and butter together in very thin slices. Also sour cream "parfaits" with browned butter and gjetost (caramelized whey cheese). And молочний суп, milk soup, which is milk and butter. I scald the milk for foaminess.

I want to try some other traditional Ukrainian dairy dishes: творожная пасха, a cheese mold for Easter made with cottage cheese, butter, and sour cream; птичне молоко, "bird's milk", a mousse made of sour cream and gelatin; and сурники, pancakes made with cottage cheese. I also want to try to make окрошка, cold kefir soup, maybe in hot weather.

I have to tweak all the recipes to remove sugar and other non-carnivore ingredients. I will report back how my experiments go!
