Keto Carnivory: Enjoying Variety Meats

I am still very much enjoying variety meats. I have been getting beef liver, sweetbreads (pancreas and thymus), heart, tendon, kidney, tongue, and short ribs. These are all really affordable cuts with practically no waste at all. Just $4 per pound!

For the leaner cuts (all of the above except for sweetbreads, tongue, and short ribs). I have either been eating them alongside sweetbreads, or adding reserved beef fat from the slow cooker. 

I have been averaging around 50/50 fat to protein ratio, by calorie. That seems to work well for my digestion. Too much fat and I get intestinal cramping and diarrhea. Too little fat and I start to go hypothyroid and gain weight.

I am avoiding pork, poultry, eggs, and dairy. They cause me to gain weight, and also are inflammatory. Ruminant meat suits me best!
