Truly Healthy Fats

The powers-that-be are always saying to eat "healthy" fats. In their opinion, that means highly processed oils from plants. Even people following more natural diets still believe strongly in plant oils such as olive oil, or coconut oil. Unfortunately, these are man-made products and do not exist in nature. For one, olives have only been in existence for about 7,000 years, a total newcomer to homo sapiens, who had been around for 140,000 years prior! In addition, these are not naturally occurring foods in their whole form.

There is no comparison when you consider 100% grassfed beef marrow to olive oil or coconut oil. The marrow is so incredibly nutrient dense and easily assimilated, that even just a few bites will provide necessary nutrients and antioxidants such as vitamin A, E, D, and K, and omega 3 fatty acids. Most plant oils contain basically no nutrients, and are often rancid as well!

It is important to get truly healthy fats from 100% grassfed ruminant animals, such as beef, bison, lamb, sheep. Their fats exist in a perfect omega 6:3 ratio which complements our health, and are again so nutrient dense that just a few bites are needed!

I want to say just a few words about tallow. Tallow is the rendered fat from ruminants, however, it is quite waxy and granular. I find it very unpalatable. I recommend instead choosing cuts which are already high enough in fats so that they don't need any added fat, or with leaner cuts, adding a little marrow or conserved fat from cooking ribs. When cooking ribs from beef or lamb, pour the juices into a container, then refrigerate, and save the congealed fat on top.

Also, I wanted to mention that I do not recommend pork, poultry, or dairy for healthy fats. Pork and poultry fats are not in a naturally healthy omega ratio, and I have found that pork raises my fasting blood glucose, and poultry fat causes me digestive problems. Also, dairy is a relative newcomer to our diet, along with agriculture, and for me causes high fasting blood sugar, increased blood pressure, and constipation.

I can't stress enough how important healthy fats are! They should make up 75-80% of one's calorie intake on a ketogenic diet. They are the basis of our nutrients, they prevent hunger, they provide needed cholesterol for a healthy and active brain, they keep our immunity high, they provide incredibly long-term energy, and they keep our blood sugar at a continuous and stable level.

Truly healthy fat comes from healthy 100% grassfed ruminant animals, grazing in the sunshine and rain, in beautiful green meadows!
