Keto Carnivore: Instant Pot?

I wrote about carnivore cooking techniques in my previous post, and I got to thinking about Instant Pot. I have never tried it, but I was reading about it. Apparently it can cook roasts in very short times, just 15-20 min per pound! So I wonder if I could just cut my big roasts into serving sizes and cook them up each time for a meal? That way I would be able to have nice freshly cooked roasts instead of reheating, which always dries them out a little.

A friend of mine who is taking the 30-day carnivore challenge is going to get an Instant Pot and give it a try. I'll report back on how it does with briskets and roasts!
