Keto Carnivore: More Types of Jerky, Organ Meats for Nutrients

I have really been enjoying various kinds of homemade jerky. I don't salt or season it at all, it's just thinly sliced dehydrated meat. I have been doing my lamb roasts (just one left!), beef heart (gets so nice and crispy!), beef brisket (OMG the fat is gorgeous and golden), and chuck roast.

This weekend I went to one of my favorite grassfed beef farms and picked up some more cuts to try for making jerky! I got rump roast, sirloin tip roast, round roast, and I'm even going to try making beef liver jerky after listening to this podcast with Dr Paul Saladino:

In that podcast, Dr Saladino talks about various nutrients that are inherent in organ meats that we really need, such as the vitamin A in liver. He mentioned that he makes liver jerky, so I thought I might give that a try!

I also picked up some more beef kidney and sweetbreads, which are great sources of vitamin B2, B12 and selenium, and B5 and vitamin C in sweetbreads! Lately I've just been cooking them both in the slow cooker all night, along with a roast or an oxtail. So wonderful!!

A friend has been eating zero carb with me, and recently decided to take the 30 day carnivore challenge. He has already lost 13 lbs. Amazing! And he still has 2 weeks to go! That's pretty great!
