Keto Carnivory: Beef Tendon Experimentation

In my search for something to replace the wonderful, sticky, gelatinous pigs feet that I adore but are high in omega 6 fatty acids, I discovered beef tendon. My local Asian grocery has them. They take the place pretty nicely! But I am still learning the right way to cook them. Asian recipes basically simmer or steam them for four to eight hours.

I am trying to use the slow cooker, but I haven't got it quite right yet. I may be cooking them too long, or with not enough water. There's still quite a bit of them that is too tough to eat. So I will keep working on it and report back!

Also, I found an online vendor that has 100% grassfed and grass-finished lamb tendons! So I ordered some and they are on the way!

I sure do love that sticky wonderfulness!
