Nutrition Overload!

I have been eating turkey liver every day now since finding I had zero vitamin C in my blood panel test. I really like liver so I was very excited to have a reason to eat more of it!

However, yesterday I might have gone overboard. I ate over 100g of turkey liver all at one sitting! Normally I have only about 30g at a time. And I felt it! My gut felt uncomfortable and bloated most of the day, and I even had a little bowel upset. I forget just how densely nutrient-packed liver is! It is important to not eat too much at a sitting. I will keep it to just 25-30g liver at a sitting...despite how delicious it is!

I did some more nutrition database research to verify meat-based sources of vitamin C. Besides sweetbreads (pancreas and thymus), liver is the best source. (Or spleen or lungs, but those are very hard to get in the USA). Fresh, lightly cooked grassfed beef, calf, and lamb liver are excellent and very healthy sources. Poultry and pork liver as well. Freshly steamed shellfish, especislly clams, also have vitamin C, but to a smaller degree.

I ordered some vitamin C testing strips so it should be interesting to see if my foods actually contain it!
