So Simple, So Good

Sometimes it just boggles my mind how we make things so much harder than they need to be. When I enjoyed my breakfast this morning of simple roasted beef tongue, I thought, wow! This is so simple, yet so good in every way! It is completely delicious and succulent. It needs no seasoning at all, although I added a touch of salt. It is so juicy and moist that no sauces are needed. No special or fancy cooking techniques required. I just put the beef tongue in an empty slow cooker on low overnight, pulled the skin off. That's it! There is no waste except for a small amount of skin.

And then there is the goodness of health! No supplements needed, nothing to counteract the deleterious effects of plant matter on the digestion. And since it is so nutrient and calorie dense, just a small amount is needed for full satiety and nutrition! An extremely efficient and sustainable food source!

And it came from my local farmer, who utilizes 100% grassfed rotational grazing practices for his cattle, as well as pasture-raised pork, sheep, goats, chickens, and guineas. His work improves the soil and environmental conditions of his whole microbiome, increasing pollination and allowing a huge variety of plant and animal life.

So simple and so good!
