Zero Carb Keto: Collagen and Gelatin

Today I want to sing the praises of collagen and gelatin!

When cooking up oxtail in the crock-pot (slow cooker) overnight, there is a wonderful transformation that happens!

The cartilage and connective tissue around the bones turn into a wonderful soft gelatin, and along with the fatty meat, makes for a very delectable mouthful!

Collagen and gelatin intake is supposed to be good for the skin and joints as well!

I read another book last night, "The Metabolic Approach to Cancer" by Winters and Kelley. In it they discussed how it is important to not cook meats at temperatures higher than 300F, to avoid creating carcinogenic compounds.

Yet another reason to do more cooking in the slow cooker! I have always cooked my larger cuts such as roasts, oxtail, and tongue in the slow cooker. But maybe I will try my lamb chops too!
