Zero Carb Keto: Fat Is So Good!

I have to sing the praises of fat today! Especially after an unfortunately lean week!

I had picked up some oxtail and some lamb stew meat at my local farm on Saturday. Normally stew meat is far too lean, but this looked fantastically fatty so I thought I would give it a try!

I cooked the oxtail and the lamb stew meat together in a dry crock-pot (slow cooker) overnight. And oh goodness!!!

They are both just delectably fatty and wonderful! Just what I needed!

Unfortunately, the lamb stew meat is too expensive to get on a regular basis (lamb is much cheaper when I buy a whole lamb share). But for a splurge, it is just amazing! This is what all cuts should be like!

I think most people will just never know what it is like, because it is so impossibly hard to find good fatty cuts like this, at least in the USA. And that is a shame, because this is exactly what our body craves. A few bites of this succulent and amazing fatty meat provides every nutrient we require, is so incredibly simple to prepare, and just off-the-charts delicious!
